Decided to use print statements here so I don't clash with the logger configuration in the neo_panamax_loc class

By default is false, so it  (hopefully) does not affect other parts of the existing codebase

Note: This does not include use of WSBs

This method grabs the most recent values of the variables and records them with the current (updated) timestamp.
